Tartar sauce (served with fried smelt)

This authentic tartar sauce uses basic mayonnaise. All you need to do is chop the ingredients and mix them. Kataoka's recipe relies on Tabasco and Worcestershire sauce for the perfect flavor. This goes well with not only the smelt in this recipe, but also with a variety of fried foods. The tartar sauce alone is so delicious you'll want to lick it all up
How to make it

Roughly chop the boiled eggs, capers, and pickles. Finely chop the onion, lightly soak in water, and drain

Mix step 1 with mayonnaise and season with Tabasco and Worcestershire sauce. (Tartar sauce is ready.)

Sprinkle salt and pepper on the smelt, coat them in flour, beaten egg, and breadcrumbs in that order, and fry in 170-180°C oil until golden brown

Place 3 on a plate and garnish with 2's tartar sauce and lemon. Sprinkle parsley over the tartar sauce
