Braised dried daikon radish

If you have leftover radish peels, try drying them in a well-ventilated place for a few days using a sieve or similar. You can easily make dried radish strips. Use these dried radish strips to make a simmered dish that has absorbed the flavors.
Also, if you're using deep-fried tofu that was fried in good quality oil, there's no need to drain the oil.

How to make it

Soak the dried daikon radish in water overnight. (It will expand several times in size if left in water overnight.)

Blanch (1) in hot water and drain

Stack two pieces of fried tofu on top of each other and shred them

Put [2] and the fried tofu into a pot, add all the seasonings, and stir. Turn on the heat, cover with aluminum foil, and simmer. (Halfway through, remove the heat, remove the lid, and let it cool. This will allow the flavors to soak in.)

Once the sauce has reduced, add 1 tablespoon of light soy sauce for flavor

Place in a bowl and sprinkle with powdered sansho pepper to finish
