Fried pear beignets

Be careful, as even a small amount of water will prevent the meringue from whipping
How to make it

Peel the pears and cut into 8 wedges

Separate one egg into egg yolk and egg white, add granulated sugar and vanilla beans to the egg yolk and mix, then add the ingredients in [A] and mix further

Beat the egg whites into a meringue that forms stiff peaks

Add the meringue to [2] in three batches and mix with a rubber spatula to incorporate air

Add the pears from [1] to [5], coat with batter, and fry in low-temperature oil at around 140°C

Once the batter is golden brown all over, drain the oil

Place on a plate and sprinkle generously with powdered sugar on top
