Sardine Namero

The key is to add plenty of aromatic vegetables. You can also sprinkle with white sesame seeds. The saltiness of the aromatic vegetables and miso makes it delicious served over rice, and it's also great as a snack with drinks or in ochazuke (rice with tea). Sardines are soft, so you can enjoy them without removing the skin when making namero. If you're concerned about the skin, please refer to the separate recipe "Sardine Sashimi" for instructions on how to remove it. Add an egg to the finished namero and drop it into boiling dashi to easily make fish balls. This is recommended when you have leftover sardines that you can't eat raw the next day

How to make it

Use sardines that have been opened by hand. If there are any tails left, discard them

Finely chop the Japanese ginger, green onions, and shiso leaves. (It's okay if they're a little coarse at this stage, as they'll be finely chopped later.)

Cut the sardines into bite-sized pieces, then chop them with a knife

Once the sardine pieces have broken down into smaller chunks, combine them with the vegetables from step [2] and chop them finely

Once everything is combined, add the miso and grated ginger and continue to pound the mixture

Knead the mixture until it becomes slightly sticky, then shape it and serve on a plate. (If you have any leftover condiments, you can put them on top for a nicer presentation.)
