How to make it

Combine the mirin and soy sauce in a bowl and marinate the mackerel for about 5 minutes

Lightly wipe off the moisture from the marinated sawara, sandwich it in Saikyo miso, and leave it to marinate overnight

Bake the marinated sawara in a toaster oven for about 10 minutes until golden brown. (You can remove it a little before it's done, brush it with a little mirin, and bake it further.)
